Mince Pie Truffles

Makes around 40

Prep time 20 minutes plus 2.5hrs chilling

Cook time 10 minutes

Ingredients


100g milk chocolate

150g dark chocolate

200ml double cream

100g unsalted butter softened

200g Vegetarian mincemeat

20ml brandy (optional)

Edible gold lustre spray (optional)

Method

  1. Chop both the chocolates and put into a large bowl.

  2. Put the cream and butter into a saucepan and heat gently until the butter melts and the cream reaches simmering point.

  3. Remove from heat, then pour over the chocolate. Stir the chocolate and cream together until you have a smooth mixture.

  4. Add the mincemeat and the brandy if using and mix through.

  5. Allow to cool a little before putting it in the fridge to firm up for at least 2 hours.

  6. Using a table spoon, spoon out enough of the mix to roll into a ball, slightly smaller than a golf ball, between the palms of your hands. Continue with the rest of the mix, dipping you hands in warm water after every few truffles so your hands don’t get too sticky.

  7. Put them back into the fridge for 30 minutes to firm up again before dusting with the gold lustre spray.
