Healthy Gluten Free Granola
A delicious, golden, crunchy mix of rice, oats and millet with seeds, nuts and dried fruit, perfect with fruit and yoghurt for those warmer mornings! Goji berries and pecans are the main stars here but you could mix it up with your favourite additions. Although theres several ingredients its super easy to make and bonus, its sugar free!
Fills a 2.5l kilner jar
Ingredients:
100g Sultanas
50g Goji berries
100g Pecans, roughly chopped
50g Brazil nuts, roughly chopped
30g Sunflower seeds
20g Sesame seeds
150g Gf oats
30g Puffed millet
100g Rice flakes
50g Puffed rice
Pinch of salt
75ml Maple syrup
150g Clear honey
1 tsp vanilla extract/seeds from 1 vanilla pod
20ml light oil, sunflower/olive/avocado
Method:
Put the oven on 180C. In a small saucepan, mix the maple syrup, honey, vanilla and oil, set on a low heat and allow to warm and combine.
Whilst this is happening mix the all the other ingredients except the goji berries and sultanas in a large bowl. Once the honey has melted pour the mixture over the grains and nuts and mix everything really well so everything is coated.
Lightly oil a large deep baking pan and line roughly with parchment. Tip the mixture out and flatten out. Bake in the oven for 30 mins, mixing every 10 minutes so that everything gets a lovely golden colour. The granola will get crispier as it cools so don't be tempted to go longer as the nuts can go bitter from being overcooked.
