Dressed Runner Beans

A nice way to dress up a simple side, packed with flavour and goes well with almost anything, particularly sausages or lamb.


Serves 2

Prep time 5 mins

Cook time 5 mins


20g of butter

1 banana shallot

8 anchovy fillets

Small red chilli

Zest and juice of 1 lemon

10 runner beans, sliced diagonally


  1. Finely chop the shallot and the chilli, removing the pith and seeds.

  2. Blanch the beans in salted water for 3 minutes

  3. Heat a small frying pan and add the butter, once melted and foaming add the shallot and cook for 2 minutes. Add the chilli and anchovies to the pan and cook for a further minute before adding the beans.

  4. Toss everything together before adding the lemon zest and juice. Let the juice reduce by half and season with pepper and serve. It shouldn't need salt because of the anchovies.
